— Wolfgang Puck
"Everything I know about baking I learned from Maida Heatter..."
— Martha Stewart Living
Maida Heatter is one of the most trusted and beloved cookbook authors of all time. Her latest boo, Chocolate Is Forever: Chocolate Desserts from the Queen of Cake, includes Simple Cakes; Special Occasion Cakes; Cookies and Bars; Pastries, Pies, Puddings and More; and Candy, Fudge and Chocolate Drinks.
Her recipes, each a modern classic, have inspired extraordinary bakers such as Dorie Greenspan, Christina Tosi, and David Lebovitz, whose foreword introduces the joy of baking with Maida to a new generation.
Lebovitz writes in the forward: "I worked for over a decade in the kitchen at Chez Panisse. The restaurant was, and still is, one of the best-known eateries in the world. It was nice to meet famous actors and to feed celebrities, but the person that I was most excited to see coming into the kitchen was Maida Heatter."
"When Maida showed up with her gray-white, well-coiffed swoop of hair, she wore her signature smile, wide enough to make everyone put down their knives (or in my case, a rolling pin) to greet her, " Lebovitz continued.
Throughout Maida’s nearly 50-year career as a “genius” of baking (New York Times), one thing was constant: her passion for chocolate. She created hundreds of recipes for chocolate cakes, puddings, pies, cookies, and more. Now, Chocolate Is Forever collects her very best, most irresistibly chocolatey delights-including The World’s Best Hot Fudge Sauce.
Maida, who passed away at the young age of 102, was the recipient of three James Beard Foundation awards for her cookbooks, was inducted in the Who's Who of Food and Beverage in America in 1998 followed later by her induction into the Chocolatier Magazine Hall of Fame.
Developed for foolproof baking by anyone, each of these nearly 100 recipes is written with Maida’s warm but no-nonsense instructions and carries her guarantee that it will work perfectly every time. With simple recipes ranging from simple cupcakes and fudgy brownies to decadent flourless cakes, Chocolate Is Forever is a must-have in every chocolate-lover’s kitchen.
